Should I respond to my ex-employer's nasty and false accusation?

No need to reply; as you said the guy is psychotic and a jerk, and there is probably nothing you could say that would satisfy him. He is not going to apologize. So why bother trying? You are free of him; stay that way. Ignore and focus on getting a new job.
